NEGRE BY SUMARROCA

 

生产工艺

三种葡萄果实进行分别处理。葡萄达到收获的季节并即时存入温度14ºC为地下室进行冷却。冷却过程需要持续三天。然后开始发酵,发酵在26 ºC的温度下持续6天,在这之后将会和大桶的苹果酸乳酸在20℃的温度下进行乳酸发酵。发酵后葡萄酒被再次转移到其他的酒桶中进行瓶装前的过滤澄清稳定。

 

果实选择

这款酒又梅洛,添普兰尼洛和赤霞珠品种酿造而成。添普兰尼洛葡萄源于面积30.5公顷的法国摩力科洛庄园,而梅洛和赤霞珠都源自面积402.8公顷的苏马洛庄园。

法国摩力科洛的酒庄和家族都生活在这片土地上。这里气候凉爽,砾质土壤。葡萄树采用双向高登式种植法由北向南种植。而苏马洛庄园的土壤则因地块而各异,这里的土壤为为大量石灰石的粘土。鲜艳的梅洛和赤霞珠果实印证了其较高的粘土和铁的含量。庄园坐北朝南,自东南向西北方向种植了梅洛果树,自北向南种植了赤霞珠果实。两者都采取双向高登式种植方法。

酒体呈现深得资樱桃色,,伴有强烈的覆盆子,樱桃,桉树和茴香的香味。丝滑绵柔的口感伴有木莓,樱桃和香草醋的余味。唇齿留香,回味悠长。

Production

The three varieties are treated separately. When the grapes reach optimal ripeness they are quickly harvested and taken to the cellar where they are cooled to 14°C. They are kept at this temperature for three days. Then fermentation begins, at a controlled temperature of 26°C. Fermentation takes six days, after which the wine is transferred to vats where malolactic fermentation takes place at a controlled temperature of 20°C. After fermentation the wine is transferred to other vats to settle for several weeks before the final coupage. It is gently clarified and stabilised before the final filtration.

 

The vines

Made with selected grapes of the Merlot, Tempranillo and Cabernet Sauvignon varieties. The Tempranillo grapes are from our 30.5ha Finca Molí Coloma, while the Merlot and Cabernet Sauvignon are from the 402.8-hectare Finca Sumarroca.

The cellar and the family house are on the Finca Molí Coloma, a cool site with gravelly soil. The vines are trained using the Royat double cordon system, and run from north to south. On the Finca Sumarroca the soil type varies from place to place but it is generally poor with a substantial limestone content. The reddish tones of the earth in the Merlot and Cabernet Sauvignon vineyards reflect their higher clay and iron content. The estate faces south/south-east and the Cabernet Sauvignon vines run from south-east to north-west while the Merlot vines run from north to south. Both are trained using a Royat double cordon system.

 

Tasting note

Ripe cherry colour with violet edges. Intense, fruity aroma suggesting raspberry and cherry jam, with youthful eucalyptus and fennel notes. Smooth and velvety with a refined raspberry and cherry flavour, and balsamic notes in the mouth which refresh the wine. Lingering, fruity finish with a hint of cherry jam.

 

Pairing

With its refreshing, balsamic notes, this wine works beautifully with cold meats and soft cheeses. Its smooth, velvety character also makes it ideal to accompany pasta dishes with pesto, cheese or mushrooms, as well as grilled white or red meat or meats served with, for example, a fruits of the forest sauce. It also combines well with oily fish or grilled monkfish, or fish served with rich, but subtle, sauces.

SANTA CREU BY SUMARROCA

 

Production

Each of the varieties is harvested when it has ripened to exactly the right degree. They are processed separately at a controlled temperature of 26°C in stainless steel vats. During maceration the wine is pumped over and aired several times to bring out as much mature tannin as possible. Maceration takes from 7 to 9 days, depending on the grape variety. Malolactic fermentation takes place in stainless steel vats.

The wine is aged for 10 months in French Allier oak casks from different makers to give the wine extra complexity. The wine is stored in our cellar for 12 months before being sold.

 

The vines

Made with the finest Syrah, Grenache, Cabernet Sauvignon and Cabernet Franc grapes from our vineyards in the Santa Creu de Creixà area of the Sumarroca estate. The ground is stony with a mix of sand and gravel which limits production but yields very high quality grapes.

 

Tasting note

Intense, deep cherry colour with a fine, intense aroma of ripe dark fruit, such as cherries and blackberries. Hints of vanilla with a background of licorice. Full flavoured with soft, well-integrated tannin. The flavours of cherry and fruits of the forest predominate, merging well with the more balsamic nuance of licorice.

 

Pairing

A soft but intense wine which calls for food whose flavour is also intense. Ideal for grilled red meat or meat with mild mushroom or fruits of the forest sauces. Goes well with soft and milder cured cheese and all kinds of pasta. A fish casserole also combines well with this wine.

Production

The monitoring of the grapes’ analytical and taste controls determine the best harvesting date for each variety used in the wine. When the date is determined, the grapes are cut and immediately taken to our facilities to avoid aromatic oxidation as far as possible. The grapes are stripped and left to ferment and macerate in stainless steel vats. The fermentation takes place at between 24ºC and 26ºC, and the maceration goes on for 5, 6 and 7 days depending on the variety. In this time, delestage and pumping over are carried out to even out and enhance the drawing of the wine’s taste and aroma. Once transferred, the alcoholic fermentation is allowed to finish. The malolactic fermentation is then performed in stainless steel vats at a temperature of 20ºC. Gentle working of the stock for two months completes the wine making.

 

Tasting note

Medium colour intensity with a violet rim. Intense and fruity aroma of strawberries and cherries on fresh floral notes. Smooth and velvety mouthfeel with a refined strawberry and cherry flavour, Lingering, fruity finish with a hint of cherry.

 

MERLOT by MAS RODÓ

merlot by MAS RODÓ

 

The combination of our rocky soil, day to night temperature change at the elevation of 500 metres above the sea level, low and controlled production at optimum harvest maturity has allowed us to develop a rigorous Merlot, very traditional, balanced, with marked acidity, fresh and Mediterranean on the palate, where 9 months of aging in French oak aligns well with the fruit. Despite the acknowledged difficulty of obtaining a quality single-variety Merlot, our wine has been rated as 'impressive'.

France's original variety such as Merlot, very well established in our estate at 500 meters of altitude of nature of our "Terroir" and continental climate. Forcing low production of the vineyards and producing only flow must, get some distinctive features, that make it a unique product.

Its aging of 30 months between French oak barrel and bottles,perfectly balanced, acidity, flavour and aroma, offering a real distinct personality.
